Absolwent Instytutu Filologii Angielskiej UJ. Interesuje się retoryką okresu kolonialnego, stylometrią oraz literaturą amerykańskiego Południa. W 2010 r. i 2014 r. przebywał na stypendiach badawczych w John F. Kennedy Institute na Freie Universität w Berlinie. Wygłaszał gościnne wykłady i prowadził zajęcia na Yale University, na University of South Carolina, na Salem State University, na College of Charleston, na Piedmont College, na Universita degli Studi di Padova oraz na Queens University w Belfaście. W 2020 r. dr hab. Choiński został laureatem stypendium Fulbright Senior Fellowship na Uniersytecie Yale.
Pierwsza monografia dr hab. Choińskiego "Rhetoric of the Revival " ukazała się w serii wydawniczej New Developments in Jonathan Edwards Studies nakładem Vandenhoeck & Ruprecht w 2016 r. Druga monografia dr hab. Choińskiego "Southern Hyperoles: Metafigurative Strategies of Narration" ukazała się w serii wydawniczej Southern Studies wydawnictwa Lousisiana State University Press w 2020 r. Dr hab. Choiński był też uczestnikiem międzynarodowego projektu badawczego NASSA (Network-Analysis and Spatial Stylometry in American Studies) we współpracy z Uniwersytetem w Poczdamie. Obecnie kieruje międzynarodową grupą badawczą POB Heritage „Interdyscyplinarne Badania nad Traumą i Pamięcią w amerykańskiej literaturze”. W skład grupy wchodzą przedstawiciele pięciu uczelni: University of North Texas (USA), Freie Universität Berlin (GER), Salem State University (USA), Université de Picardie Jules Verne (FR) oraz Uniwersytetu Jagiellońskiego.
